Do you ever forage for wild plants? I really love to incorporate treasures from our backyard in our meals and each year I try to include more. We have an abundance in our woods that offer themselves at various times of the year. Highbush cranberries, red currants, horsetail, many wild edible flowers, bolete mushrooms, spruce tips, fiddlehead ferns, chickweed, wild raspberries, and lambsquarter. These are just a few; Alaska has so much to give!

I remember foraging lambsquarter with my grandmother and eating it. “Tastes like spinach!”, she used to say. And she was right, it does taste like a mild spinach. It’s very recognizable and has a white powdery substance that coats it. Anything you forage should be washed well and of course it’s vital to be absolutely 100% sure you know what you are picking.

If you’re not able to harvest any wild greens where you are, spinach will work just beautifully in this dish or feel free to just omit the greens completely if you prefer.

Chickpea Artichoke Rice with Lambsquarter Greens

This is a hearty brown rice dish featuring protein-rich chickpeas, tasty artichoke, savory herbs and spices, wild-foraged lambsquarter greens, and a dash of zingy fresh lemon. Hands-off and great for a weeknight meal, this is a healthy and delicious way to introduce picky eaters to brown rice and foraged greens (or spinach!)

Ingredients
  • 1 cup uncooked long-grain brown rice
  • 1 15 oz can diced tomatoes
  • 2 cups + 2 tbsp (thereabouts) vegetable broth
  • 1 tbsp olive oil
  • 1 small brown onion, diced small
  • 2 large garlic cloves, minced
  • ½ tbsp paprika
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp seasoning or table salt
  • dash of white pepper
  • 1 15 oz can chickpeas, drained
  • 1 15 oz can quartered artichoke hearts, drained
  • 1 cup unpacked foraged lambsquarters leaves or spinach
  • 2 tbsp fresh parsley, chopped
  • ½ lemon, zested and juiced

Instructions
  1. Add the dry rice to a rice cooker. Drain the diced tomatoes, reserving the juice in a liquid measuring cup; add in enough vegetable broth to equal 2 ¼ cups of total liquid (for me this was about 2 cups and 2 tbsp of broth). Add to dry rice, and cook according to your rice cooker. Brown rice takes about 1 hour to cook.
  2. While the rice cooks, heat the oil over medium-low heat in a large rimmed frying pan. Add the onion and garlic, sauteing for about 5-8 minutes until the onions are translucent. Stir in the spices, herbs, salt and pepper; cook for an additional 2 minutes.
  3. Stir in the chickpeas and artichokes; simmer over low heat for about 10 minutes, stirring occasionally. Remove from heat and cover; allow to rest until rice is cooked.
  4. Wash the greens well. When the rice is done cooking add the greens to the pan and stir until wilted. Add in the rice, parsley, and lemon juice and zest; stir well to combine.
  5. Serve hot and topped with additional parsley and lemon zest if you like.

These aren’t much to look at, but I guarantee you that everyone is going to love them! Quite possibly one of Todd and my favorite meals, these tacos are so quick and easy to whip up. Perfect for a busy weeknight. Oliver really enjoyed putting the lettuce on the tacos too, so kid-friendly! Yay!

Have you watched the Tidying Up with Marie Kondo show on Netflix? I read her book several years ago and still fold my clothes in her very particular way, even though I found the book to be slightly absurd. We watched the show a couple weeks ago and pretty much turned our house upside-down. I don’t know what it was about actually watching her go through with people and help them ‘tidy up’ but it really made an impact on us. If you haven’t seen it, it’s definitely worth the watch! Okay, PSA over. Now it’s taco-time!!

This is one of the best weeknight meals around, vegan or otherwise! These tacos are super fast, healthy, there’s very little prep, everyone loves them, the tacos are customizable to tastes, and they leave little cleanup. A giant win in my book!

Ingredients
  • 1 tbsp olive oil
  • 1 15 oz can of sweet corn, drained well
  • 2-3 small zucchinis, diced small
  • 1 15 oz can of chickpeas, drained and rinsed
  • 1 ¼ cup whole raw walnuts
  • 2 ½ tbsp soy sauce
  • 1 tbsp ground cumin
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • ½ small head of romaine lettuce, chopped
  • 20 cherry tomatoes, halved
  • ⅓ cup fresh cilantro, chopped
  • 8-10 taco-size flour tortillas
  • Sprinkle of shredded vegan mozzarella
  • Spoonful of salsa, to taste
Ingredients
  1. Over medium, heat the oil in a large frying pan. Once hot, saute the corn and zucchini for about 5 minutes, stirring occasionally, until they begin to brown. Remove from heat and set aside.
  2. While the veggies fry, place the chickpeas through the garlic powder into a food processor. Pulse several times, until the mixture resembles taco meat. There should be small chunky bits of walnuts and chickpeas, and the spices should be well blended. Transfer to a microwave safe bowl.
  3. Prep the veggies. Microwave the taco meat for about 1-2 minutes, until warm. Heat the stack of tortillas in the microwave for about 15-30 seconds, to heat.
  4. To assemble the tacos, place lettuce on one taco, followed by taco meat and pan-fried veggies and then the remaining veggies. Top with a sprinkle of shredded vegan mozzarella and a spoonful of salsa, to taste, on each taco. Divide the fillings evenly between all the tortillas. Serve hot.

Whew! I've been gone for a short while, huh? Sorry 'bout that. Part of my absence was due to our destruction/recreation of the study. More specifically putting in a wall to wall desk! Thus, my computer found itself unplugged and stuffed into the corner on vacation for at last a week while we worked. Check out my social media (links in the right sidebar), where I plan to post a photo of the awesome new desk. I posted some photos of our kitchen last week!

Also, the site had been down for a few days and I had to sort out what had made it crash. Turned out it was some snippet of code in my sidebar. That's why you might not have been able to access the site last week. Being the no-nonsense lady that I am I just straight up and whacked the entire sidebar rather than pick through the code. Oh well, at least it's back up!

Still, I'd be exaggerating to say that my neglect of this little space was all to do with the update of the study and the site being down. Most of it was that I was just into some really great books and that I spent most of my free time reading. My free time is pretty limited these days. Anytime spent not working on things for the house (organizing stuff from moving, updating the study, installing a water filter [thanks, Dad!], creating a guest room, spreading topsoil for the lawn, digging large rocks out of the driveway... the list is never-ending) is coveted. It doesn't leave a lot of room for cooking and honestly I've been kind of too pooped to cook. Fresh fruit has overtaken my life as my main source of nutrition these days. It could be worse I suppose. We'll also be having about one month straight of guests, so you may hear less from me than even now!

When I have cooked, it's mostly been sweets (brownies and cinnamon rolls, predominantly) and soups. Who knows. Stress does weird things to people. I finally dug out the camera that was buried in the mess of the study to snap some photos of this wonderful stew though. Yay! Gold star for me for actually doing something productive here! I have made this stew countless times and I really enjoy the flavor. It's always those staple recipes that I neglect to share! They are arguably the most important too. I'll be better about sharing my staples, promise. In the meantime I'm just taking smarts from good ol' Confucius here...

A quick and easy flavorful stew that’s as healthy as it is tasty. Full of protein and fiber, this hearty stew will fill you up and keep you satisfied. It’s a staple in our house! NOTES: More water can be added to any leftovers, if desired, as the pasta will absorb some of the liquid while sitting.

Ingredients

  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 large garlic cloves, minced
  • 1 tbsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp kosher salt
  • 2 15 oz. cans of diced tomatoes, liquid included
  • 2 15 oz. cans of chickpeas, drained and rinsed
  • ½-1 cup water
  • 1 cup pasta of choice
  • 1 bunch of chard, de-stemmed and chopped (or spinach)
  • 1 tbsp lemon juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large soup pot, heat the olive oil over medium-low heat. Add the onion and garlic; saute for about 3 minutes until the onion is tender. Add the cumin, ginger, and salt; saute for an additional minute or two until the garlic is fragrant.
  2. Stir in the tomatoes, chickpeas, and water. Bring to a boil over high heat then stir in the pasta. Reduce to a gentle boil and cook for about 9 minutes, until the pasta is al dente.
  3. Remove from heat and stir in the chard, to wilt. Before serving, stir in the lemon juice and cilantro. Serve hot.

Yield: 6
