Basil Cream Pasta + Spring Vegetables & Tofu

Okay, first...a question. What do you feed your vegan dog? Bailey has been on Taste of The Wild - Salmon for a long time now, but I harbour yucky feelings about it. Yes, yucky feelings regarding the ethics of said dog food of course, but more so about Bob's optimum health. First and foremost let it be noted that I've done a lot of research on the subject of vegan dog food and I know that dogs can thrive exceptionally on a vegan diet. Cats, however, absolutely cannot. Also, interesting factoid, the longest dog to ever live was vegan. So there's that.  Bailey is basically Todd's and my furry, giant toddler (he can open doors, cabinets and microwaves, people). We want him to be the healthiest he can be. This is why he gets walks twice a day (you think I enjoy going out in 60 mph winds) and eats his fair share of vegetable trimmings #nocompostncessary. He'll eat any vegetable, really. Except raw onion and celery. He politely passes on those. 

If you follow Produce On Parade using Facebook, Instagram, and/or Twitter you'll know I'm thinking of transitioning him to Natural Balance Vegan Formula dog food. Do you have experience with this dog food or any other vegan dog food? Bailey is a seven year old Husky/German Shepherd rescue who weighs 92 lbs., and is moderately active...when feels like it. I would very much appreciate any input into this matter. Thank you in advance!

Sometimes I just want need a rich and creamy pasta dish. You know, where plant-based milk and cashews can do their beautiful dance together in a Vitamix? Throw in a handful of fresh basil to this cream sauce and it's on an entirely different level of ecstasy. Combine with steamed broccoli, asparagus, and a little baked tofu...that there is a one amazeballs meal. Quick note, I'm somewhat intrigued by the fact that I did not get auto corrected for amazeballs. Interesting

Nom, nom, nom...basil. Best herb ever, no? Is there anyone just going through life not liking basil? I'm curious. 

Basil Cream Pasta + Spring Vegetables & Tofu

Serves 6

Notes: For the pasta in this dish, I tried to pick a shape that was similar to cut asparagus. Penne would work well, too! The vegetables can be steamed, roasted, or sauteed and any vegetables you like can be substituted. I used coconut milk for this recipe. Almond milk isn't recommended as I think it has too strong of a flavor and may overpower the basil. 

  • Sustenance: 
  • 1 head of broccoli florets, chopped
  • 1 bunch of asparagus, sliced on the diagonal 
  • 1 lb. pasta, dry (your choice)
  • 9 oz. baked tofu (I like Wildwood brand), cubed small
  • Onion & Basil Mixture:
  • 1/2 Tbsp. olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup fresh basil, chiffonaded 
  • Roux:
  • 1 Tbsp. olive oil
  • 1 Tbsp. all-purpose flour
  • 2 cups soy or coconut milk
  • Blender:
  • 1/2 cup raw cashews
  • 2 Tbsp. nutritional yeast
  • 1 tsp. kosher salt
  • 1/4 tsp. ground black pepper

Begin by steaming the chopped vegetables. I did this in my electric steamer. You want them tender and bright, but not mushy. Alternatively, they can be roasted or sauteed.

Meanwhile, heat 1/2 Tbsp. oil in a small saucepan on medium-low. Add the onion and garlic. Sautee for about 5 minutes, until the onions have browned. 

Next, add the basil to the onions and saute for about 1 minute, until just wilted but still bright green. Remove from heat and transfer to a small plate until ready for use. 

Produce On Parade - Basil Cream Pasta + Spring Vegetables & TofuIf the water is boiling for the pasta, add it and cook until al dente. Strain and set aside. The pasta should be done right after the rest of the recipe is finished.

Produce On Parade - Basil Cream Pasta + Spring Vegetables & TofuIn the same saucepan, heat 1 Tbsp. oil over low. Then add the flour, stirring for a few minutes until the flour becomes fragrant. Now, slowly whisk in the soymilk and turn to medium heat. Whisk occasionally until the milk has thickened slightly. Transfer carefully to a blender. 

Add the blender ingredients as well as the basil and onion mixture to the blender. Blend on high until smooth and creamy. A tip for blending very hot ingredients is to allow a little steam to vent through the lid so there's no explosion.

Drain the cooked pasta if it hasn't been already and add it back to the pot. Mix in half the sauce. Stir well to coat, then incorporate the vegetables and the tofu. Add the remaining sauce and mix very well.

Serve hot and topped with additional fresh basil.

Avocado-Cilantro Cream Angel Hair

This is such a delightful spring dish. It also happens to be counting as my "green" today. If you follow me on Facebook, Twitter, or Instagram you know that my morning was pretttty shitttty. Needless to say, I completely forgot it was St. Patrick's Day and ran out of the house thankful to be on time for work (breastases aren't going to be mammogramin' themselves you know), let alone wearing green. Lucky for me (I'm part Irish), not a single person pinched me today. Whew!

If you happen to be one of those poor souls who hates cilantro (I hear it's genetic...no, seriously) stay far, far away from this dish. Same goes if you strongly dislike avocados. However, I have yet to meet such a person and will totally notify you if I ever do. Who hates avocados?

This is one luxurious dish. Angel hair pasta bathes in a light and dreamy avocado-cilantro cream sauce. It's a bit sweet, with a hint of ginger and zesty lime. Barring any anger towards cilantro or avocado...you're going to love it. You'll also love that it's done in the time it takes to boil up some pasta! And that's something we can all be thankful for. 

Side Note: It's weird to me now that I used to make pasta sauces sans veggies. Like non-vegan, traditional mac & cheese and alfredo sauce. My vegan mac & cheese is made with sweet potato and my alfredo sauce with cashews and cauliflower. Then there's this delicious cream sauce with cilantro and avocado. Ponderous. How sad and boring (not to mention lacking some superfly nutrients) it must be for people to make traditional pasta sauces. They don't know what they're missing...and that makes my heart all glum

Avocado-Cilantro Cream Angel Hair

Serves 6

Notes: The pasta should be done at the same time, or just after the sauce. You don't want it to sit cooked. 

  • 16 oz. angel hair pasta, dry
  • 1 tsp. olive oil
  • 6 large garlic cloves, sliced
  • 2 large ripe avocados, pitted
  • 1 large bunch of cilantro (stems and all)
  • 3 limes, juiced
  • 1 small knob of fresh ginger, peeled and rough chopped
  • 1/2 cup plain non-dairy milk
  • 1 Tbsp. olive oil
  • 1 Tbsp. agave nectar or maple syrup
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. crushed red pepper flakes

Bring a large pot of salted water to boil for the pasta. When boiling, cook according to package which is usually about five minutes. Drain and return to pot. 

Produce On Parade - Avocado-Cilantro Cream Angel HairMeanwhile, heat the 1 tsp. of olive oil in a small saute pan. Add the garlic and saute for a few minutes, until browned and fragrant. Remove from heat. 

In a food processor, add the remaining ingredients including the sauteed garlic. Process until smooth and creamy.

Add the sauce to the cooked and drained pasta, stir well to coat.

Thai Coconut Curry Soup

Soup. I make a lot of the stuff.

Also, who's going around not liking soup?! That's like someone saying they don't like music. It's just implausible. If someone tells you that they don't freaking love soup...they are not to be trusted. I warned you.

Produce On Parade - Thai Coconut Curry SoupA creamy, coconut based soup full of fresh veggies with a strong Thai influence thanks to cilantro, ginger, curry and lemongrass. A soup that's perfect for those January blues.

At least the states have snow. It's cold again here in Alaska, but we now have no snow to speak of after our little chinook! Not even one lousy, nasty snow berm in the median. It's that dire. 

Thai Coconut Curry Soup

Serves 10

  • Aromatics:
  • 1 Tbsp. coconut oil
  • 1 medium yellow onion, diced
  • 1 Tbsp. curry powder
  • 2 Tbsp. red curry paste
  • 1/2 tsp. turmeric
  • 3 garlic cloves, minced
  • 1 Tbsp. fresh ginger, minced
  • 1/2 Tbsp. fresh lemongrass paste (or half a stalk)
  • Veggies
  • 1 small carrot, thinly peeled and chopped in half
  • 1 red bell pepper, diced
  • 10 oz. fresh white mushrooms, sliced
  • 3 oz. fresh fancy snow peas, cut in half diagonally
  • Broth:
  • 8 cups vegetable broth (I used my homemade broth!)
  • 2 14 oz. canned full-fat coconut milk
  • 3 Tbsp. brown sugar
  • 1 Tbsp. worchestershire sauce
  • 1 Tbsp. soy sauce
  • 1/2 tsp. crushed red pepper
  • 1/2 Tbsp. miso paste
  • Conclusion:
  • 20 oz. firm tofu, drained and diced
  • 2 limes, juiced
  • handful of fresh spinach
  • 1/2 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced

In a very large soup pot, heat the coconut oil over medium flame. Add the rest of the aromatic ingredients and saute until the onions begin to brown, about 5 minutes.

Meanwhile chop up the veggies. Add the veggie ingredients to the pot and saute until the carrots begin to soften, about 8-10 minutes. 

Produce On Parade - Thai Coconut Curry SoupProduce On Parade - Thai Coconut Curry SoupNext, add in all the broth ingredients, except for the miso paste. In a small cup, add about 1/2 cup of the warm broth and stir in the miso paste, until dissolved. Now, add to the pot and stir to combine.  

Turn the heat up to medium high and allow to cook for another 5 minutes, but do not allow it to boil. Once thoroughly heated, turn to low and add the conclusion ingredients. Allow to cook just long enough to heat the tofu.
