Wow, it's been awhile! Summer is always a busy time: visiting with friends, doing work around the house and yard, playing with our wee man, and in general spending as much time as possible outside enjoying our gorgeous summer in Alaska. 

Now that the leaves have started to fall and the air is bitingly crisp, I feel excited to spend more time here on the blog as winter starts to slink in. I couldn't think of a better way to kick off the fall season than with a recipe I've been meaning to share for a long time.

One of my BFFs makes a butternut squash pasta with just those two ingredients and a splash of olive oil... it's to die for! I knew smoked gouda and roasted garlic would really marry beautifully with the sweet squash so I just had to experiment. This recipe will not let you down. Normally I don't cook with oil (due to Todd's rheumatoid arthritis), but don't skimp on the one tablespoon. There's no sauce in this dish, so you really need that little bit of olive oil to coat the squash and pasta. Happy cooking!

Sweet, roasted butternut squash coat this warm and comforting pasta while garlic and smoked gouda add a bit of richness. With so few ingredients, the stars of this dish really shine. Simple and bursting with flavor yet incredibly easy and hands off; great for a weeknight dinner. I love that this pasta is sophisticated enough for a proper dinner with company, but casual enough for a Monday meal after work. It’s one of my very favorite meals.

Ingredients
  • 1 medium butternut squash, peeled and deseeded and cut into ¾” cubes
  • 1 tbsp olive oil
  • 3 large garlic cloves, left in their peel
  • 12 oz dry spaghetti
  • ½ of one 8 oz. package of Miyoko's Creamery Smoked VeganMozz or vegan cheese of choice, shredded
  • 1-2 tsp Johnny’s Seasoning Salt or regular table salt
  • 2 tsp fresh lemon thyme, for garnish (optional)
Instructions
  1. Preheat oven to 400°F. Add the cubed squash to a large casserole dish and toss with oil. Roast for 45-60 minutes, stirring every 20 minutes until the squash is fork tender. When there’s 20 minutes left, toss in the garlic then bring a large pot of water to boil for the pasta.
  2. Cook the pasta according to package, drain and return to pot. Peel the roasted garlic and smash it into a puree with a spoon in a small bowl. Stir the garlic, cheese, salt, and roasted squash into the pasta.
  3. Serve hot and topped with fresh lemon thyme and fresh cracked black pepper.

Herbed Acorn Squash Bisque

This soup is pure love. Love of squash. Love of Fall. Love of whatever you like.

I tend to favor acorn squash for smooth soups over butternut squash for a couple of reasons. One; butternuts always tries to kill me when I'm trying to crack them open and two; acorn squash has a more developed flavor when roasted compared to butternut. Did I mention that the little green guys are a lot easier to work with?

Poor little acorn squashes all forlorn and neglected in favor of trendy butternut or snazzy spaghetti squash. Not 'round these parts. This soup delicately showcases acorn squash in all it's glowing glory. Todd and I ate the entire pot in one night, that is how amazing this soup is. I plan to make it for thanksgiving too, which is a coveted recipe spot!

Herbed Acorn Squash Bisque
A perfectly creamy, fall soup that’s incredibly delicious. It’s quite easy to prepare and mostly hands-off. A delight for Thanksgiving!
Ingredients
  • 2 acorn squashes (about 3-4 lbs. total)
  • 1 Tbsp. vegan butter
  • 1 medium yellow onion, diced
  • dash of kosher salt
  • dash of ground black pepper
  • 1 Tbsp. fresh rosemary, minced
  • 1 Tbsp. fresh sage, minced
  • 2 cups vegetable broth
  • ½ cup full-fat coconut milk
  • 1 dried bay leaf
  • dash of freshly ground nutmeg
Instructions
Microwave both whole squashes on high for about 10 minutes. Allow to cool for 5 minutes, then slice in half lengthwise. Preheat oven to 450 F and coat a baking sheet with a nonstick cooking spray. Scoop out the seeds from the squashes and discard. Place the four squash halves face-side down on the sheet and cover loosely with aluminium foil. Bake at 450 for about 20 minutes, until very tender.Meanwhile, heat the butter in a large soup pot over medium low. Add the diced onion and sauté until fragrant, about 5-8 minutes. Sprinkle with a dash of kosher salt and ground black pepper to taste. Add the fresh herbs and sauté for a few additional minutes. Now, add in the remaining ingredients and bring to a low boil. Carefully scoop out the flesh from the cooked squash and allow to lightly boil for about 10 minutes. Remove the bay leaf and transfer the soup to a blender. Blend on high, allowing steam to escape the lid, until smooth. Add additional water as needed to thicken to desired consistency. Serve hot.

Fall Vegetable Soup with Butternut Squash

Thanks to one of my beautiful sister-in-laws, I am now blessed with the privilege of being subscribed to Vegetarian Times. I had been wanting to subscribe to Vegetarian Times as well as Vegnews for a while, but I just hadn't got around to it and I have to say, I am loving it! Well, I still don't have Vegnews (gift idea for me anyone!?) heh heh. Anyways, I was reading through the September issue when I saw, staring back at me with all the love in the world, the most delicious and hearty looking of soups. I knew, instantly, I had to make it. I almost just straight up walked out of work, okay that's a bit of an exaggeration, but seriously you guys...I was crazed. 

Fall Vegetable Soup with Butternut Squash

This is undoubtedly shameful, but usually when I see a recipe with butternut squash, which I absolutely adore, I am filled with sadness and yes, a little bit of disgust. Butternut squash and I have a love/hate relationship. You see, I am lacking what some would call..."muscles", particularly in the arm region and in addition to that I have very weak and what I deem as "sad" wrists. Yes, it's a thing and no I'm not a hypochondriac...but this isn't a story about my wrists.

What I am trying, albeit a bit winded (as are all of my stories, just ask my Dad), to say is that I just have the damnedest time trying to cut open those mofos.  However, I seem to remember the butternut squash not being a particularly difficult foe to peel, so I made a grand exception for this lovely soup. And oh let me tell you how happy I am that I did.

This soup was just the best. I really have no other way to describe it except that it was simply "the best". Alright, I'll try. This Fall Vegetable Soup with Butternut Squash will make you yearn for your veggies all day and night. That's the best I can do. It's so good I can't even describe it. I highly recommend you make it. Very highly. It's easy, delicious and super nutritious.

This hearty fall soup is loaded with veggies and butternut squash. It’s warm and comforting and just perfect for a cozy weeknight night in. A delicious way to get in your day’s worth of vegetables!

Ingredients
  • 1 Tbsp. olive oil
  • 1 ½ cups celery, diced
  • 1 bell pepper, diced (I used orange)
  • ½ cup green onions, sliced
  • 5 garlic cloves, minced
  • 1 tsp. salt
  • 2 tsp. dried Italian seasoning
  • 1 bay leaf
  • 7 cups water
  • 1 cup vegetable broth
  • ¼ tsp. ground black pepper
  • 2 large vine-ripened tomatoes, chopped
  • 2 heaping cups butternut squash, peeled and cubed
  • 1 15 oz. can of green beans, drained and rinsed (or 2 cups fresh)
  • 1 15 oz. can of white beans, drained and rinsed
  • 1 cup sweet corn (either fresh kernels or frozen)
  • 1 tsp. balsamic vinegar
  • 3 Tbsp. fresh mint, chopped finely
  • 1-2 large handfuls of fresh spinach
  • 1 Tbsp. fresh thyme leaves, for garnish (optional)
Instructions
  1. Heat the oil in a large soup pot or pressure cooker. Add the celery, bell pepper and green onions. Stir occasionally over medium heat, covered, for about 5 minutes; remove the lid and continue to cook for another 5 minutes.
  2. Add in the garlic, salt, Italian seasoning, and the bay leaf and stir continuously for about 1 minute or until fragrant. Add in the water, vegetable broth, ground black pepper, and the tomatoes. Bring to a boil and then turn down to low and simmer for about 15 minutes or if using a pressure cooker for about 5 minutes.
  3. Add in the squash and simmer for about 10 minutes, covered. Add in the green beans, white beans, and the corn and continue to cook over low for another couple of minutes. Remove from heat and add in the vinegar, mint, and spinach and stir well to combine. Allow the spinach to wilt.
  4. Serve hot and topped with fresh thyme. I like lemon thyme the best.
