Creamy Salted Caramel Tea

As you may know, I recently bought a 1 lb. bag of caramel Rooibos tea. Yes, a ONE POUND BAG, that's a lot of tea. Who does that? I think I've used...1/500th of it. Anyways, last night I wanted to make a dreamy and silky Rooibos tea instead of the regular ol' steeped, plain tea. 

This Creamy Salted Caramel Tea is thickened with coconut cream, sweetened with dates and Kahlua, and has just a pinch of salt. What's not to like? This cup of winter coziness is the perfect beverage for a chilly night. Inspired by my sweet tooth!

Creamy Salted Caramel Tea


Creamy Salted Caramel Tea

This rooibos based Creamy Salted Caramel Tea is thickened with coconut cream, sweetened with dates and Kahlua, and has just a pinch of salt.

Ingredients
  • 1 cup boiling water
  • 1 Tbsp. caramel Rooibos Tea (or tea of choice)
  • 1/2 cup full-fat canned coconut milk
  • 1 medjool date, de-pitted and chunked
  • 1 Tbsp. Kahlua
  • 1/4 tsp. xanthan gum (optional)
  • small pinch of salt

Instructions
  1. Steep the tea in the hot water for 5 minutes. This will be a very strong cup of tea.
  2. In a blender add all the ingredients, including the steeped tea. Blend on high, until the dates have become completely integrated.
  3. Serve hot, topped with a dash of cinnamon if you wish!

My dad told me today that it was just so awesome that Todd's inflammation levels are back to normal and how much better he's doing than half a year ago. He then told me, nonchalantly, that I am "some witch-doctor"...thanks...Dad... Well, Mr. Todd is sick today. He's got a stomach bug/flu or something. So, being my witch-doctor self, I recalled a kind of turmeric "tonic" or other, on the world wide web. I decided that this was exactly what my one true love needed...among Aleve.

Turmeric is quite the powerful little spice. My Healing Spiced Turmeric Tea is...dare I say reminiscent of eggnog? Throw a bit a rum in and it really would! Among turmeric, it has nutmeg, cinnamon, cardamon, black pepper, and ginger. Wait, this seems to be venturing into Chai territory? Well, either way, it's base is silky coconut milk, and with the addition of xanthan gum it really makes this tea super creamy and dreamy. The vanilla and maple syrup add a comforting, sweet note.

Healing Spiced Turmeric Tea

Inspired by Simple Veda

Makes 2 cups

  • 2 cups coconut milk (from carton, I like Silk)
  • 1 Tbsp. ground turmeric
  • 1 Tbsp. fresh ginger paste (or chopped ginger root)
  • 1 tsp. ground cinnamon
  • a dash of freshly ground nutmeg
  • 1/4 tsp. ground cardamom
  • 1/4 tsp. xanthan gum powder (optional) 
  • 1/4 tsp. vanilla extract
  • pinch of black pepper
  • 1 Tbsp. maple syrup

In a small saucepan, combine all the ingredients except the maple syrup and whisk vigorously to combine over medium heat. Continue to whisk every so often, until the tea is almost boiling.

Hibiscus Fruit Punch - An Antioxidant Powerhouse

Did you think Matcha green tea was the healthiest beverage in the universe. Me too. Science told us so! But now, science has come to the conclusion that there's an even higher superpower, antioxidant powerhouse of a beverage. It's still tea. You're shocked I know, me too. If you like tea you'll love this recipe, and if you hate tea...you'll love this recipe. What is this magical tea? It's hibiscus!

Beautiful and nutritious! When I first learned this valuable information, I thought, "Hibiscus tea?! Great...I'll never find that anywhere except Jamaica or Hawaii..." Um, I was wrong. You've seen the Celestial Seasonings "Zinger" teas, yes? Well that my friend is hibiscus tea. Yep, right there in your very own, local grocery store you have the items necessary to make the most antioxidant rich beverage.

In this recipe, the hibiscus tea is cold brewed with lemon and some erythritol (or if you're feeling naughty, sugar) and it really does taste like a mild fruit punch. The lemon adds a zesty tang but also helps make those antioxidants from the tea more bioavailable. The erythritol of course sweetens it up but also adds it's own antioxidants! I like to add a few drops of coconut extract just for extra tropical fun! This is a delicious, cold drink that's great to sip on throughout the summer. Hibiscus Fruit Punch

Makes 8 cups

  • 8 cups of cold water
  • juice from 1 lemon
  • 3 Tbsp. erythritol
  • a few drops of coconut or banana extract
  • 4 tea bags of Celestial Seasonings Wild Berry Zinger Tea (or your favorite hibiscus tea) or 2 Tbsp. dried hibiscus

In a large pitcher, stir the lemon juice, erythritol, and extract into the 8 cups of water.

Submerge the tea bags and cover. Allow to steep overnight and then sip all throughout the next day to keep your body fighting off those darn free radicals!
